Pioneer Woman Green Beans

Alright!
This blog is picking up speed!
Sooo....
I thought I would post a quick and easy recipe!

Pioneer Woman Green Beans~
Ingredients
  • 1 pound of FRESH green beans from your local farmer's market
  • 1 cup of chopped onions (also fresh)
  • 2 cloves of garlic
  • 1/2 cup of chopped red bell pepper (Fresh! :) )
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1 cup of chicken broth
  • 1/2 to 1 teaspoon of kosher salt (or 1/4 to 1/2 teaspoon of table salt)
  • Ground black pepper

Steps
  1. Snap the stem ends off of the fresh green beans
  2. Melt the butter and olive oil in a skillet on medium heat
  3. Add garlic and onions into the skillet
  4. After a rough minute throw in your greenbeans and cook until they are bright green.
  5. Add chicken broth, the red pepper, salt, and black pepper
  6. Turn heat to low and cover with a lid (leave a crack in the side to allow it to steam)
  7. Cook for 20-30 minutes or until the liquid evaporates and the beans are kind of soft, but still a bit crisp!
  8. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the the peppers and onions can carmelize.
  9. Enjoy!


I tried this recipe the other night and it feeds about 4 people if you are getting a good serving size! It is delicious, fun, and easy!
